In 2019, LE FOU GASCON acquired a brand new laboratory located in the heart of the Gers valleys…
I draw my inspiration from the many assets that the Gers region has to offer: • its countless specialties, • its variety of local producers, • its rolling, generous landscapes, • its incredible palette of colors, • its unfailing conviviality, • …and the renowned love of good food of its inhabitants. What could be more natural than to set up my new laboratory at the heart of all this inspiration? This is where the magic comes to life…

All my professional equipment is here!
Ovens and stoves to raise the temperature,
vast work surfaces worthy of an aircraft carrier,
cold rooms to keep my servers fresh from one season to the next (fresh and ready just for you!),
a washing tunnel to clean them and make them sparkle (the dishes too),
every imaginable utensil for cutting, mincing, slicing, dicing… and all sorts of other verbs ending in -er!
not forgetting a fine collection of whisks, whips, and other top-of-the-line tools for any self-respecting caterer!
Always in good spirits and adhering to strict hygiene standards to guarantee you the best possible service.
One of a kind: my great-great-grandfather bequeathed me the very first parsley curling tongs in history! Not to mention my egg white whipping ladder, a must-have in the profession (electric mixers are overrated).
